Job Description

As Restaurant GM, you will report directly to both the COO and group chairman, and be responsible for the daily operations of the restaurant; optimising profit, development and training of staff, stock control and ordering, cashing up, sales analysis and attainment of set KPIs. You will also ensure flawless customer service and consistent excellence in food and beverage quality at all times. Commercial and managerial acumen and proactive, enthusiastic and welcoming attitude is must.

 

IDEAL APPLICANT

  • Proven career record in managing city based restaurant
  • Ideally experience in Japanese food, or at least a very strong interest and willingness to learn in this area
  • Passionate about running a business, with a sixth sense for profitability, maestro-level multi-tasking skills and the nous to make sound calls on business decisions
  • Excellent level of spoken and written English
  • Experience working in a fast paced London restaurant
  • Ability to troubleshoot as well as having a pro-active approach to sales
  • Dedication to delivering an outstanding customer experience
  • Enthusiastic go-getter with a passion for the restaurant industry

CORE DUTIES

 

Business Management

  • Quickly be fully converse with the Restaurant operation and to efficiently manage the operation of all shifts
  • Take a keen interest in the current business situation and to bring in sound ideas to increase profit, decrease spending, up selling orders and maximising guests spend where possible
  • Ensure the planning and implementation of sales strategies for profitability
  • Coordinate sales and marketing campaigns with marketing team
  • Generate weekly and or monthly management reports i.e. restaurant sales/performance, workforce planning & development and food management
  • Ensure that set KPI’s and sales targets are met
  • Manage the control of labour, supplier and staff costs without compromising standards
  • Ensure great and consistent customer service as well as deals with all customer queries and complaints in a professional manner and in line with company’s policy
  • Proactively communicate financial information such as budgets and costs for timely management decision making
  • Forecast potential revenue and cost with particular reference to labour
  • Support Kitchen operation and management when needed
  • Ensure all staff is followed the Company’s Customer Service Steps at all times
  • Attend all management meetings and training sessions as required
  • Keep abreast with market changes and trends in the restaurant scene in London
  • Represent and promote the brand to all internal and external parties

 

Team Management

  • In conjunction with HR – recruiting, selecting, scheduling, and coaching + planning, monitoring, appraising, and reviewing job performance of employees
  • Performance management and managing disciplinary
  • Identify training needs and capability gaps within the team
  • Ensure staff are inducted, trained and given supervision, motivation and advice on all aspects of their work as they develop
